In a compelling example of journalism excellence: “Final Fantasy VII Remake’s water mode is way too wet”— Dylan Sprouse (@dylansprouse) April 10, 2020
The Kotaku writer first played the game in Normal mode (which is the highest difficulty level you can choose when first playing as a Hard mode isn't available until after completing the game). After a particularly hard section for them, they then switched it to Easy mode where it was, well, easier and then left it in that mode. According to them, the change was too drastic and this game's Easy mode is "just button-mashing bullshit" and "a joke". And if you need something more akin to a visual novel, then apparently Classic mode is even simpler than Easy.
The original title of the article drew so much mockery/criticism in the vein of "no, duh" including from Dylan Sprouse, former child star/current meadery owner that Kotaku has since retitled the article to the less click baity The Difference Between Final Fantasy VII's Easy And Normal Modes Is Too Drastic
what mode do you play in first time around?
