[Recipe]Oatmeal Cookies

1 stick of unsalted butter
1 cup firmly packed lt. brown sugar
1/4 cup granulated sugar
1 TBS. vanilla
2 large eggs
1/2 tsp. salt
1 tsp. baking soda
1/2 tsp. baking powder
1 cup flour
2-1/2 cups old fashioned oats
3/4 cup golden raisins

Cream Cheese Filling

2 -8 oz. bars cream cheese
2 Tbs. softened unsalted butter
1-1/2 cups confectioners sugar

Preheat oven to 350 degrees. In a stand up mixer, using the paddle attachment, cream the butter and both sugars until light and fluffy. Add the vanilla and eggs one at a time until fully incorporated. In a separate bowl combine all of the dry ingredients with a wire whisk. Add the dry mixture to the butter mixture on medium speed, just to combine. Add the raisins and mix until evenly incorporated. Roll into 1 oz. or 1 inch balls. Place on parchment lined baking sheets about 3 inches apart. Press down ball to a flat into one inch disk. Bake for 12 minute until cookie is set and bottoms are golden brown. Baked cookie should be 2 inches each. Let cool completely. To make the filling, using the paddle attachment combine the cream cheese and butter in a stand up mixer. Add the powdered sugar and combine completely so that the filling is completely smooth. Pipe out about 2 tablespoons of cream on flat side of cookie. Top with another cookie and refrigerate until filling is firm for about 15 minutes, then serve. Or alternatively refrigerate cookie sandwiches in resealable bags until ready to serve.

Makes about 20-24 Sandwiches.
