I'm debating on whether I want to make pumpkin chocolate chip cookies tonight. We're going out tomorrow but I have a roast on now and wouldn't mind some dessert.
I don't have like a set recipe, but I've done curry-onion-pumpkin and gouda-spinach-pumpkin. Deeeelicious.
Just mix pumpkin puree (unseasoned obvs) with those ingredients so it's about 1/3 pumpkin, 2/3 other stuff, fill small pie crust cut-outs (like a very large circle) and seal the edges and bake. You can Google any ol' hand pie recipe to get crust/temps/tips/etc.
At my parents house we have a turkey that had multiple babies in the backyard, which are gone now, but the mom lingers and she SHITS EVERYWHERE. They are foul creatures, but I will still eat one tomorrow.

I also may make pumpkin cupcakes with a cream cheese frosting next week! I've never had it before but it sounds good.
